The Alliance of Terroirs and Winemaking

CAYAS BLANC Heida is the result of a blend of two exceptional terroirs: that of Saillon, particularly the Les Mages vineyard, and that of Visp.

The Saillon terroir, protected by mountains and benefiting from limestone soils, offers ideal conditions for slow ripening of the grapes. This particular climate gives the wine great finesse, a distinct minerality and exceptional aromatic complexity. The Visp terroir, on the other hand, is more mountainous, with soils ranging from alluvial to schist, bringing freshness and depth, with a beautiful verticality and elegance that balance the whole.

The vinification process has been designed to respect the purity of the fruit and the uniqueness of each terroir. The harvest is carried out manually. Gentle pressing is then carried out to limit the amount of sediment and preserve the finesse of the aromas. After cold stabilisation of the sediment for 5 days, settling is carried out to clarify the must, before fermentation in 220-litre ‘Wineglobe’ glass barrels, tuns and 400-litre barrels.

These containers were chosen for their specific oenological properties. The ‘Wineglobe’ glass barrels, with their unique shape, allow for gentler fermentation and optimal management of oxygen exchange, while preserving the integrity of the fruit. The wooden casks promote slower fermentation, enriching the wine with micro-oxygenation and complexity. The 400-litre barrels, meanwhile, allow the wine to mature while retaining its freshness, without overly influencing the woody aromas.

After the first fermentation, the wine is stabilised and aged in these different containers for 8 to 10 months before being blended in concrete vats for a further 5 months of ageing. This blending and ageing process enhances the expression of the terroirs and preserves all the purity and freshness of CAYAS BLANC Heida.

The result is a wine of great complexity, combining the richness and minerality of its terroirs with the finesse of its vinification.

CAYAS BLANC reveals a luminous golden colour and a delicate nose combining white flowers, white-fleshed fruits and a subtle minerality. The palate combines freshness and a silky texture, carried by an elegant liveliness that highlights the purity of the grape variety. The long and delicately salty finish is the hallmark of a white wine with character, refinement and depth of expression.
