Our Dôle Grand Cru de Vétroz comes from the alluvial part of the Balavaud vineyard, made up of alluvial gravel from the Lizerne river. The plots are between 25 and 50 years old.
The destemmed Gamay (40%) and Pinot Noir (60%) grapes are fermented together for one part and separately for another. After a few days of cold maceration, the wine is extracted by gentle punching of the cap, then aged for 6 to 12 months in vats after pressing.
